Coconut Flour Biscuits

This originally was intended to be a recipe blog, but in the end, Sister Madly got in the way. She likes to cook, certainly, but only seems to feel like it when she’s down the street at the pub, and never after. Food often spoils in her fridge once the will to cook had died upon returning from the market.

When the decision was made to expand it into a recipe/crafty blog, Sister Madly pointed out that she hadn’t cleaned in a while, that she most likely would not be doing so in the near future, and would you please do something about that spider crawling up the wall.

(There had also been a disagreement on the definition of ‘crafty’ as she took to a more literal sense of the word.)

It was then suggested that the blog should be about nothing in particular- “carte blanche, Sister Madly, carte blanche”– and it was to this that Sister Madly finally agreed in those last cheerful moments before launching down the Springwater Trail, resulting in a long and horrible bike ride of bees, hail, opposing winds, miserable cold, two flat tires and an extremely sore bum.

Sister Madly, you see, is conceited, lazy and naughty.

But she makes an excellent Cheese Biscuit. (Coconut Flour)

Primal Biscuits

COCONUT FLOUR BISCUITS

  • 1/4 cup butter, melted
  • 4 eggs
  • 1 tsp garlic powder
  • 1/2 tsp Old Bay Seasoning
  • 1/4 tsp salt -OR- garlic salt
  • 1/4 tsp baking powder
  • 1/3 cup coconut flour
  • 1 cup cheese, finely shredded (Sister Madly prefers Asiago or Parmesan)

OPTIONAL TOPPING

  • 1/2 cup olive oil/butter, melted
  • 1 tsp garlic powder
  • 1/4 tsp parsley
  • 1/4 tsp Old Bay Seasoning
  • 1/4 tsp salt -OR- garlic salt (opt but recommended)

Preheat oven to 400*
Mix together butter, eggs and spices
Mix together flour and baking powder
Add flour mixture to liquid mixture
Fold in cheese (add a little at a time until thoroughly mixed in)
Drop dough onto parchment lined baking sheet
Bake for 8-10 minutes

Meanwhile, prepare topping by mixing ingredients together (if using)
Brush Biscuits with topping immediately from Oven
Bake up to an additional 5 minutes

Makes approx 6-8 lg biscuits/10-14 small
